Best practicies and/or recommendations for securing data (files) with Server 2012?

I wondering if it's possible (and if so - how to implement it) to secure data (like file shares with encryption perhaps?) using Server 2012 in such a way that would render the files useless if they're removed from the servers?

Like a lot of people, I'm sure, I have sensitive shared, data on my network (i.e. Human Resources stuff, etc.). I'm trying to implement a way so that if someone removes the file(s) from the network...they're useless and can't be read.

Is this goal possible? Wouldn't using BitLocker achieve this?

Comments? Suggestions?
